Day 13. Anissa Helou A Culinary Historian’s Journey.

“Food is memory, culture, and history on a plate. To understand a people, taste their food.”
— Anissa Helou
As we continue honoring Arab American icons, today we celebrate Anissa Helou, the Lebanese-Syrian culinary historian and author whose work preserves and honors the rich and diverse culinary traditions of the Arab world.
A Journey Rooted in Food and Culture
Born in Beirut, Lebanon, to a Syrian father and Lebanese mother, Anissa Helou grew up surrounded by the flavors and aromas of Middle Eastern cuisine. After pursuing studies in art and auctioneering, she eventually found her calling in culinary history. Helou’s passion for food became a way to connect with her heritage and share it with the world.
In 1994, she published her first cookbook, Lebanese Cuisine, which became an instant classic and established her as a leading authority on Middle Eastern and North African cooking. Helou’s extensive travels throughout the Arab world, Turkey, Iran, and beyond have allowed her to document traditional recipes and culinary practices that might otherwise be lost.
Preserving Culinary Traditions
Helou’s works are not just cookbooks—they are cultural archives. Through titles like Mediterranean Street Food and Feast: Food of the Islamic World, she offers readers a glimpse into the vibrant and varied food cultures of the Arab world and its diaspora. Reflecting on her work, Helou once said: “Cooking and eating are acts of preserving history. Each dish tells the story of a people, a region, a memory.”
Her book Feast is particularly notable for its comprehensive look at the culinary traditions of the Islamic world, blending personal stories, recipes, and historical context.
A Global Culinary Ambassador
Helou’s influence extends beyond her writing. As a culinary instructor and speaker, she is committed to educating the next generation about the art of Middle Eastern cooking and its significance. Through her social media presence and public appearances, she encourages people to preserve their culinary heritage and appreciate the diversity within Arab cuisine.
